Buffalo Meat Recipes

Buffalo meat is low in fat and since fat acts as an insulator, heat must first penetrate his insulation before the cooking process of the protein begins. Buffalo, with its low fat content, does not need to be cooked as long or with as high a temperature. Caution must be taken that you do not overcook buffalo.


Cook roasts at 275º. A buffalo roast will be done in the same amount of time as a beef roast of comparable size that is cooked at its normal temperature. Check your roast though, as it may be finished cooking even a little sooner.


When oven broiling, move your broiler rack down a notch. Turn your steaks a few minutes sooner than you would your beef.

Ground Buffalo Ground buffalo is very lean. Make sure you lower the temperature to prevent scorching. Pre-formed patties tend to dry out faster when grilling, so the thicker the patty, the juicier the burger.

Remember to either reduce the cooking time or lower the temperature.

Marinaded Buffalo Steaks

4 – 6 Buffalo Steaks
1 can beer
2 tsp. tobasco sauce
1 tbsp. Worcestershire sauce
2 – 3 cups BBQ sauce
1 onion chopped
Salt & Pepper to taste

Leave steaks in the marinade at least 4 hours. Overnight in the fridge is optimum. Remove from marinade and barbeque to desired doneness. Don’t overcook.
Steaks recommended for barbequing or grilling are Rib-Eyes, T-Bones and New York Strips.

2″ 14 – 20 min. 20 – 25 min.

Buffalo Eggplant Stew

2 lbs. Buffalo stew meat or cut roast
2 onions, finely sliced
½ cup oil
¼ tsp turmeric or curry powder
3 medium eggplants
1 lb. fresh mushrooms
1 tsp. salt
2 tbsp. tomato paste or 2 cups tomato sauce
1 cup crushed tomatoes 2 tbsp. lemon juice In Dutch Oven, brown meat and onions in 3 tbsp. oil. Add turmeric and salt.Pour 3 cups water, bring to a boil, cover and simmeruntil meat is cooked. (1¼ hours).
Peel eggplants, cut and fry or brown under broiler. Add tomato paste and lemon juice to meat.

Place all ingredients in casserole with eggplant arranged on top. Bake at 350º 1 hour.

Buffalo Loaf

2 lbs. ground buffalo
1 cup bran or dry bread crumbs
1 tsp. salt
½ tsp. black pepper
¼ tsp. garlic powder
¼ tsp. nutmeg
3 eggs
1 cup milk
1 cup shredded carrots
1 cup finely chopped celery
1 cup finely chopped onion
½ cup BBQ sauce or ketchup Beat eggs and milk together. Add bran or crumbs and seasonings, mix well and let stand a few minutes.Add meat and vegetables. Blend thoroughly. Spread evenly in a 9″ x 13″ pan.
Spread BBQ sauce over the mixture. Bake at 325º for 1 hour. Let stand 5 minutes before cutting.

Serves 10 to 12.
